Segmented Category Lists

Eric, I found a post that showed how to remove a specific category from showing up in the category list however how do I create a widget that allows you to show specifically one or two categories that I want displayed. For example I removed all "accessories" from my master check category list and now I want the Accessories and all the subfolders to be a separate navigation list in the right column. Can you give me a clue how this would be done?
